  • 1 1/2 cups shredded cheddar or Mexican-blend cheese
  • 1 cup black beans, drained
  • 1 cup salsa
  • 1 jalapeño, sliced, optional
  • Green onions and cilantro for topping

Equipment

  • Cast-iron skillet or disposable foil pan
  • Foil
  • Campfire gloves or tongs

Preparation

Layer half the chips, cheese, beans, salsa, and jalapeño in the skillet. Repeat once, then cover loosely with foil.

Cooking Instructions

  1. Set the covered skillet over a grate above medium coals.
  2. Cook 8 to 12 minutes, until the cheese is melted and the beans are hot.
  3. Remove from heat and add green onions and cilantro.
  4. Serve straight from the skillet.

Camp Cooking Tips

Use sturdy chips and keep the salsa light so the bottom layer stays crisp. Rotate the skillet if one side of the fire runs hotter.
